Chicken Tortilla Soup...

Yesterday was downright cold. We never got out of the 40's and that kind of weather calls for soup. Here is one of our favorites. I always double the recipe. It's so easy to make even our son could whip this up!

2 packages (1 box) of Lipton Noodle Soup (cheaper) or Chicken Noodle Soup
2 chicken breasts, cooked and shredded
5 Cups water
2 cans of Rotelle (I use 1 original and 1 mild) (Find it with canned tomatoes)
2 cans Cream of Chicken soup
1 tsp. cumin
1/2 cup chopped onion

Combine all ingredients in stock pot and simmer. Serve with Tortilla chips crumbled up in your bowl along with grated cheddar cheese. Yum!

Mmm, sounds yummy. I'll have to give it a try. I love this time of year because it's time to start cooking that stick to your ribs kinda food again. A yummy soup with a good hearty bread hits the spot on a cool fall night.

Okay, Claire...this sounds too good to pass up. I'm making Gayla's Nacho Cheese Soup this week but this one's on the menu for next week's shopping trip! MMMMM.....

May I ask what 'rotelle' is?
This sounds a yummy soup, but I wonder if there is a brit equivalent to some of the products I so often find in the recipes of my american friends :)

ukok, Rotelle is kind of like canned tomatoes with a Mexican "kick". It comes very spicy, original spicy, or mild.
